Nut Mylks (With Herbal Booster)

(after you make this you won't want to use store bought again !)

Pre Prep: 2-4 hours

Prep: 10 minutes

Serving: 3 Cups

 

Ingredients:

  • 3  cups water- Steeped w/3 Tbsp ‘Gut Healing’ or ‘Hug in a Cup’

         ‘Hug in a Cup’ is great if using for; Lassi, Fruit Smoothie, Strawberry Milk, or Just on it’s own     with a little honey (Steep in water, 10mins)

‘Gut Healing Broth’ is great if using for; Green Smoothie Base, Cream or Milk Replacer in a Creamy Soup, Neutral Enough in a Hot Cocoa Beverage, Vegan Pudding, Get Creative (Steep in water, 20mins)

 

  • 1  cup pre soaked nuts (almonds-4 hours, cashews-2 hours minimum soak, can soak overnight in the fridge, (Cheat:Soak in Boil water for 1 hour covered and off heat)
  • 3  dates (if you want to sweeten with honey, agave or maple syrup instead, add sweetener in 2nd step)
  • ½ tbsp soy powdered lecithin (emulsifier, totally optional, found in the bulk section in Whole Foods®) You don’t need to add this if you are avoiding these items.

 

Directions:

  • Strain Herbs after 10mins for ‘Hug in a Cup’ & 20 mins for ‘Gut Healing Broth’
  • Strain nuts from water and discard the water
  • Blend, Herbal water & Nuts until fully broken up, you want it fine so it does not tear the nut bag
  • Hold open a nutbag over a bowl and pour the mixture into the bag.
  • Squeeze until all the liquid is extracted.
  • If you don't want the water and nut fat to separate, add ½ tbsp lecithin and quickly blend for 30 seconds
  • At this point, you can sweeten or freeze for later use (NEVER microwave to defrost, transfer into the  fridge in order to defrost)

 

Sweeten step 2

½    vanilla bean scraped (feel free to leave the bean skin in the milk for more flavor)

1~2 Tbsp honey, agave, maple syrup (your choice)

pinch of salt
