Servings: 4 servings (¼ cup per serving)
Ingredients:
- 1 Banana (overripe will be sweeter)
- ½ Cup Coconut Milk (canned)
- ½ Fresh Almond Mylk or Boxed
- 3 Tbsp ‘Hug in a Cup’
- 1 Tbsp Optional Additional Sweetener
- ½ teaspoon Vanilla Extract (optional)
- 2 Pinch of Salt (⅛ teaspoon per pinch)
- ¼ cup (4 tablespoons) Chia Seeds
Directions:
- Bring to a low simmer your Almond Mylk, Steep covered and off heat your ‘Hug in a Cup’ in your Mylk for 10 mins
- Strain your Mylk and allow it to cool for 5-10mins or place in the fridge while gathering additional ingredients.
- In your blender add all of your ingredients EXCEPT for the Chia Seeds
- Blend until smooth and creamy
- Pour the mixture into a bowl
- Pour the Chia Seeds into the mixture and with a whisk or with a fork mix the chia seeds in for about 30 seconds.
- Keep your fork and whisk going for the full 30 secs, this will allow the chia seeds not to stick together while they expand.
- Cover your bowl with a lid and place into the refrigerator overnight or at least 30 minutes. This will allow your liquid to become a pudding.
Fun Toppings- keep it simple
- Plain or toasted Coconut Flakes & Blueberries
- Sliced Bananas, drizzled local Honey
- Raspberries and Blackberries
- Mango slices and sprinkled Hemp Seed
- Passion Fruit
- Thinly Sliced Figs & Crushed Pistachio
