Brilliantly balanced and bursting with Berries and Beets, this popsicle will revive
Pre Prep Time: 10 minutes (if fresh juicing, 20mins)
Serving: 8, 4 oz popsicles
Ingredients:
- 1lb Frozen Dark Cherries
- 1 cup Beet Juice, 4 Medium Red Beets if Juicing or Unpasteurized Beet Juice (Whole Foods Juice Bar)
- ½ cup Fresh Lemon Juice (2 large lemon)
- ⅓ C Boiling Water Steeped for 10 mins with 2 Tbsp Hug in a Cup
- 2 tbsp Maple Syrup or Choice Sweetener
Instructions:
- Veggie peel the skins from the Beets, then juice
- Remove Cherries from the freezer and thaw for 5 minutes
- Roll your Lemon back and forth on the cutting board a few times, this will make it easier to squeeze
- Cut your Lemon in half and squeeze into a bowl removing the seeds
- Throw the Cherries, Beet Juice, Maple Syrup, Strained Herbal Water and Lemon Juice into the blender
- Cover and blend until smooth
- Pour liquid into your popsicle molds leaving about ¼ inch from the top (water expands and they will overflow if you overfill)
- Freeze overnight
(Important Note; best to put in the back of the freezer so they get a good hard freeze)
BONUS:
Can Fill Halfway and drip full fat coconut milk into your molds. This will stream almost a creamsicle effect. (You can Steep this Coconut milk/Cream with 1 Tbsp ‘Hug in a Cup’ for a bonus Rose Essence)
